What is matcha and how is it produced?

Matcha is a finely ground powder made from specially grown and processed green tea leaves. Unlike regular green tea, where the leaves are steeped and discarded, with matcha you consume the entire leaf, maximizing its nutritional benefits.

To produce matcha, tea plants are shade-grown for several weeks before harvest. This process increases chlorophyll levels, deepens the green color, and boosts the amino acid content (particularly L-theanine). After harvest, only the youngest, most tender leaves are selected. These are steamed, dried, de-stemmed, and slowly stone-ground into a fine, vibrant green powder.

Matcha holds a central place in traditional Japanese tea ceremonies and has been part of Japanese culture for over centuries. Today, it is also widely used in cafés, restaurants, and bakeries worldwide, valued for its unique flavor, versatility, and health benefits.

Where does matcha come from?

Matcha originates from Japan. While green tea is grown in various parts of the world, true, authentic matcha comes from Japan, where climate, soil, and traditional farming methods create a uniquely high-quality product.

PerfectTed's matcha comes from Uji, which is considered the birthplace of Japanese matcha and is globally recognized for producing matcha of the highest grade.

What is the difference between the grades of matcha?

Matcha is generally categorized into three main grades: ceremonial, premium, and culinary. Each grade differs in terms of leaf selection, production process, color, and flavor profile.

Ceremonial Grade

This is the highest quality matcha, made from the youngest, first-harvest tea leaves. It has a vibrant, bright green color, an ultra-fine texture, and a rich, smooth taste with strong umami and natural sweetness. This grade is traditionally used in Japanese tea ceremonies, where it's enjoyed in its purest form.

Premium Grade

Sitting between ceremonial and culinary, premium grade is made from older leaves from the first or second harvest. The flavor is less refined, more grassy, and starts to edge into bitterness. The color is noticeably duller, and the texture less creamy.

Culinary Grade

The lowest grade of matcha, made from the oldest leaves, from later harvests. These leaves contain more tannins, leading to a noticeably more bitter and astringent taste. The color is more olive or dull green, and the texture is more coarse.

Does matcha contain caffeine?

Yes. A 2-gram serving of PerfectTed matcha contains approximately 68 mg of caffeine. A double espresso contains about 58–185 mg.

Preparation & Use

How do I prepare one serving of matcha?

What You’ll Need

  • 2 g PerfectTed ceremonial grade matcha
  • 30 ml water
  • 175 ml plant-based milk (hot or cold, depending on your recipe)
  • (Optional) Ice
  • (Optional) 10 ml syrup (we recommend Monin)
  • Scale
  • Bowl
  • Electric whisk or bamboo whisk (chasen)
  • Glass or cup

Instructions

1. Prepare the Matcha Base

  • Carefully weigh 2 g matcha powder and 30 ml water, and add both to a bowl. Use a bowl at least twice the volume of the liquid to avoid spilling.

2. Whisk the Matcha

  • Electric whisk:
    Place the electric whisk in the bowl and mix until a nice foam layer forms and no lumps remain.
  • Bamboo whisk (chasen):
    Soak the chasen in hot water for 1–2 minutes to soften the bristles. Then whisk the matcha in a zigzag (W or M) motion until smooth and frothy.

To Make a Hot Matcha Latte:

  1. Heat 175 ml of plant-based milk (don’t boil).
  2. Pour the whisked matcha into a cup.
  3. (Optional) Add syrup to taste.
  4. Add the steamed milk and stir gently.
  5. (Optional) Finish with a small spoonful of matcha foam on top.

To Make an Iced Matcha Latte:

  1. Fill a glass with ice.
  2. (Optional) Add syrup to the glass.
  3. Pour in cold plant-based milk (175 ml).
  4. Top with the whisked matcha for a beautiful layered effect — or stir for a uniform color.

How do you prepare batcha (a batch of prepared matcha)?

What You’ll Need:

  • 2 g PerfectTed ceremonial grade matcha
  • 30 ml water
  • Scale
  • Bowl
  • Electric whisk or frother
  • Squeeze bottle


Instructions:

  1. Carefully weigh out the matcha powder and water using the ratio 2 g of matcha per 30 ml of water (this equals one serving). Add both to a bowl. Make sure the bowl is at least twice the volume of the mixture to avoid spilling.
  2. Place the electric whisk in the bowl and begin mixing. Whisk until you achieve a nice foam layer and there are no lumps remaining.
  3. Pour the mixture into the squeeze bottle. Pour through a sieve if you want to ensure no lumps remain.

Storage & Shelf Life

How should I store matcha?

Matcha powder is very sensitive to oxidation and temperature so we recommend storing it in an airtight container away from direct light exposure (you can also keep it in its current packaging). Do not transfer matcha into a glass jar for storage - exposure to light affects its quality. The best place for matcha is in the fridge, treat it a bit like you would a fresh vegetable.

How long does an opened bag of matcha stay fresh?

An opened bag of matcha is good for up to 3 months if stored in a cool, dry place and properly sealed.

How should I store batcha?

Batcha is best consumed within 48 hours (for quality reasons, not due to food safety). Keep refrigerated.

Preferably store in a sealed squeeze bottle.
