Crispy Falafel Wrap

Ingredients (Serves 4)

Wrap Components:

  • 1 pack crispy falafel
  • 1 pack whole grain wraps
  • ½ red cabbage
  • ½ pointed cabbage
  • 1 bag arugula
  • 1 red bell pepper
  • 1 red onion
  • 1 cucumber
  • 1 apple
  • A handful of fresh parsley
  • A handful of fresh mint
  • 1 lime
  • 1 lemon
  • Olive oil
  • Hummus (for spreading)
  • Salt & pepper
  • Chili flakes (optional)

Tahini Dressing:

  • 3 dl plant-based drink (e.g. oat or soy)
  • 3 cloves garlic
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Salt & pepper to taste

Instructions

1. Prepare the tahini dressing
Add the plant drink, garlic cloves, tahini, olive oil, and lime juice to a food processor. Blend until smooth and creamy. Season with salt and pepper, then pour into a jar and set aside.

2. Prepare the falafel
Preheat the oven to 180°C (fan setting). Place the falafels on a baking tray lined with parchment paper and bake for 10–12 minutes until golden and crispy.

3. Mix the fresh veggie salad
Finely chop the red onion, red bell pepper, cucumber, and parsley. Combine in a bowl, squeeze over the juice of half a lemon, and season with salt and pepper.

4. Make the cabbage slaw
Thinly slice the red cabbage, pointed cabbage, and arugula. In another bowl, toss with the juice of the remaining lemon and a tablespoon of olive oil. Mix well.

5. Prepare the apple-mint mix
Cut the apple into thin wedges and chop the mint. Add to a third bowl, drizzle with juice from half a lime, sprinkle with chili flakes if using, and mix gently with your hands.

6. Warm the wraps
Heat a dry skillet over high heat. Lightly moisten each wrap with water and toast for 30–60 seconds per side until slightly crispy.

7. Build your wrap
Spread hummus on the wrap, layer with the cabbage slaw, veggie salad, apple-mint mix, and crispy falafel. Drizzle with tahini dressing and wrap it up!

 

Serving Tip:
Serve with extra dressing on the side and enjoy immediately for the best texture and flavor.
